Hey Palu in Edinburgh Earns PIN Status in Global Bar Recognition System 

The Pinnacle Guide, the pioneering recognition system that celebrates excellence in bars worldwide, has unveiled the latest additions to the list of PINNED bars, marking a milestone with the first-ever 3 PIN bar. With 20 newly announced bars from 14 different cities, this announcement highlights the growth and impact of the guide and its revolutionary approach to recognising outstanding hospitality in the bar industry.

The Pinnacle Guide continues its mission to decentralise traditional awards systems, offering a more inclusive and diverse recognition model. In this latest round, a broad range of bars have been celebrated for their innovation and commitment to quality across the board.

Lyaness, located in London’s iconic Sea Containers hotel, makes history as the first bar to receive The Pinnacle Guide’s coveted 3 PIN status. Owned by award-winning bartender Ryan Chetiyawardana, Lyaness, known for its creative use of ingredients and groundbreaking techniques, such as parallel fermentation and cryogenics, has redefined the modern bar experience, seamlessly blending cutting-edge processes with thoughtful storytelling in a relaxed atmosphere.

Alongside Lyaness, The Pinnacle Guide has awarded 19 new 1 and 2 PIN classifications to bars from 14 different cities, spotlighting diverse establishments that are shaping the future of cocktail culture. The U.S. is home to five additional PINNED bars, spanning Arizona, Florida and Washington D.C., while new entries from Scotland, Northern Ireland, Spain, and Dubai, further spotlight The Pinnacle Guide’s international reach. 

The latest additions to the list continue to spotlight bars leading the charge in sustainability, with several recognised for their innovative and forward-thinking approaches to zero-waste cocktails, among other areas of excellence. For example, Happy Accidents in Albuquerque reduces waste by distilling surplus ingredients and eliminating glass usage through in-house distillation. Similarly, FURA in Singapore focuses on creating an eco-friendly drinking experience by using locally abundant, low-carbon-footprint produce.

The Pinnacle Guide is driven by a unique submission process that first evaluates bars on six key criteria, including their drinks program, staff welfare, and overall atmospherics. Bars which make it through the first round are then reviewed anonymously by a global network of industry enthusiasts and experts who have undergone rigorous training to assess the bars holistically, ensuring that each establishment is judged, not just by its cocktails, but by the entire guest experience.

The Pinnacle Guide continues to accept applications throughout the year, with plans to expand its reach into new markets and celebrate even more bars in the future. Whether neighborhood gems or world-renowned cocktail destinations, bars of all styles are encouraged to apply as The Pinnacle Guide recognizes excellence in all its forms.

The next submission deadline for bars to apply is 30 November.
